We add a spooky Macrofit spin to these classic energy balls. Instead of coating the balls in chocolate or yogurt, adding extra sugar and carbohydrates, we opted for a mixture of reduced-fat cream cheese and zero-carbohydrate yogurt. Using old-fashioned rolled oats in this recipe will give you long-lasting energy. These balls also pack fiber thanks to oats and chia seeds. This recipe makes about 21 eyeballs.
Ingredients:
For the balls:
1 ½ cups Old-Fashioned Rolled Oats
1 cup Peanut Butter (No Added Sugar)
¼ cup Maple Syrup
1 tablespoon Chia Seeds
1 scoop Vanilla Protein Powder (Iconic)
1 teaspoon Vanilla Extract
Plus water as needed to bind
For the coating:
2.5 ounces Cream Cheese (⅓ Less Fat)
¼ cup Chobani Zero Vanilla Yogurt
1 tablespoon PB2
Plus water to thin out and candy eyes
Directions:
Combine all ingredients for the balls in a medium mixing bowl. If needed, add water one tablespoon at a time to help the mixture bind together. Use a cookie scoop to portion out each ball, then roll it between your hands. Place the balls on a lined baking sheet. Refrigerate the balls while you work on the coating.
In a mixer or food processor, combine the cream cheese, yogurt, and PB2. If needed, add water one teaspoon at a time until the mixture is smooth and thin enough to coat the balls.
Coat the balls with the cream cheese and yogurt mixture. While the coating is still wet, decorate the balls with candy eyes. Place the decorated balls in the freezer overnight so the coating can harden.
Once the coating has hardened, enjoy! Tip: leave these in the refrigerator until ready to serve to avoid the coating from “melting.” If the coating is well-set in the freezer, this shouldn’t be a problem.
